Roast Chicken with Vegetables

Roast Chicken & Vegetables

This is so easy to do.  Pick out some winter vegetables - I used carrots, onions & potatoes.  Peel and wash them.  Place them in a roasting pan with a chicken.  Baste the chicken and vegetables with dark maple syrup and sprinkle a little rosemary over the chicken.  Bake at 350 degrees.  Continue to baste chicken and vegetables about every 20 minutes throughout cooking.  Time to finish will depend on chicken size.  It's a delicious one pan meal!

Pork

This is another easy dish.  I used pork center cuts.  Place in a roasting pan.  Sprinkle maple sugar on top.  Bake at 350 degrees for about 35 minutes.

Butternut Squash

Slice down the middle.  Remove the seeds.  Place in pan.  Place 1 teaspoon of butter  in hallow and pour maple syrup over.  Cover with foil.  Bake at 350 degrees approx. 1 hour.

Maple Syrup and Maple Sugar

There are so many wonderful things you can use Maple for. Try maple sugar in your coffee or on your toast.  Pour maple syrup over vanilla ice cream.   Use maple syrup in salad dressing or barbaque sauces.
